      Leave Madrid for Chinchón and stand in its Plaza Mayor, ringed by tiers of wooden balconies and still used as a bullring. Step into the Asunción church to find Goya's Assumption over the altar. After lunch, try a small glass of the town's anís, then continue to Nuevo Baztán.

      Nuevo Baztán feels like a village drawn on a plan, and you can read its grid of streets as you walk. Visit the Palacio de Goyeneche and its church, then look in at the interpretation centre in the old wine cellars. Afterwards, head home to Madrid.
