Three storeys of wooden balconies frame the irregular Plaza Mayor of Chinchón, which over the centuries has staged bullfights, plays, proclamations and film shoots. Above it, the church of the Asunción keeps an Assumption painted by Goya. A 17th-century Countess of Chinchón gave her title to the cinchona tree, and the town's name lives on in a well-known anís.
