In the old centre of this Itria valley town, butcher's shops double as grill houses, and the dish to order is bombette, small rolls of roast pork. The whitewashed lanes, a classic of unplanned building, open onto squares at the very edge of the hill, looking south-west over a countryside dotted with trulli.
