Tall houses of four or five storeys cling to the steep slopes above the gorges of the Roya, a valley that once carried the salt road from the Mediterranean ports to Piedmont. Saorge guarded that route for the counts of Savoy and changed hands in battles of 1793 and 1794, joining France only in 1860. Its medieval core survives largely intact, a maze of stepped, often vaulted lanes.
